Comparison with mild german sauerkraut







I have follow my market research and went to the shop at basement plaza singapore to try the sauerkraut there. In order to have a fair judgement, I bring along ah NHI who has tried my sauerkraut. I spoke to the shop attendent and she show me a can of sauerkraut. That is the last can and it is a bit dented. I asked her when are they going to have new stocks, she did not know. It is not going arrive soon and I have to buy the can. Lucky they have some sample of the sauerkraut to try and I do not need to open the open. But I told the attendent that I will buy it anyway, I just want to try the sauerkraut.






She took a small portion for me and I asked ah NHI to also try it. She told me that it is not as sour as mine and she find my sauerkraut actually more tasty than this german sauerkraut. I am very happy. I also feel the same way too. It does not smell as nice as mine too.






We also bought a live crab home to celebrate and I cook a wonderful dinner. Fried fish and also crab meat salad. I was rushing and I forgot to add cucumber in my salad. But it still taste very good. I actually put the crab on my table and it was watching me as I am typing. I kind of feel sorry for the crab. It is so live now but I should be dead tomorrow and inside my stomach. Should I just let it off?

We do not have preservatives in our saurkrut. We do not have pesticides as well and we have passed the heavy metal test of our product. This is the test results from ALS again. Strawberries for sunday

More juice pinkish colour


Sauerkrut of white and red cabbage mixed. This indeed gives my product a more attractive colour.It kinds of give the product more pattern too as there is 2 colours in my product now. I should say it still taste good and very sour. I am more concern about the fermenting process. I am trying to find better ways to obtain a standard procedure and that really requires better equipment. I am beginning to find it a tiring job. Definitely I have to learn to delicate and train people to do the job. I have been through it. The first time is exciting and I look forward to it. After that I feel draggy. My focus is actually on other areas like how I can market the product. How to sell it. How to make it more tasty. Packing and preparing? I will like to take a pass.


There is something that I experience today. I find out that when I soak my hands and fingers into the sauerkrut juice, It kinds of gives me a good and fresh feeling. When I wash my face with the juice, it also gives me a good feeling. UMM....there may be possibility that sauerkrut can do to our skin when comes into contact.


I will like to experiment further into it. Maybe I can soak my left hand and left feet into sauerkrut juice for 10 min a day and leave the right side untouch. After 2 weeks, I can put both hands and legs together to check if there is any obvious changes. Its kind of scary to use my hands and legs to experiment it. But it is a must take risk.

Is sulforaphane present in sauerkrut ???

When we speak of sauerkraut, the finns are the experts who studied it the most. Here is the abstract of one the their chemical analysis of sauerkraut.
The formation of plant-derived biomolecules during sauerkraut fermentation was studied. Cabbage was fermented with a starter culture, and the results were compared to the results of spontaneous fermentation. The concentration of flavonoids and glucosinolates was analyzed by HPLC, and that of the glucosinolate breakdown products, by GC-MS. Of the 20 different flavonoids tested, only kaempferol was found (0.9 mg/ kg FW, fresh weight). The content of kaempferol remained constant in the cabbage fiber matrix over the fermentation process. The nitrite concentration was below the detection limit in both fermentations. The total glucosinolate content in the raw material was 3.71 micro mol/g DW, dry weight. Glucosinolates were totally decomposed in both fermentations during two weeks, and different types of breakdown products were formed. Isothiocyanates, indole-3-carbinol, goitrin, allyl cyanide, and nitriles were determined in the fermented cabbage. Isothiocyanates and allyl cyanide were the predominant breakdown products in both fermentations. [b]Sulforaphane nitrile and goitrin were found only in small quantities in the end products.(1)According to this study, glucosinolate - one of the element required to produce sulforaphane - is totally decomposed by the bacteria is about two weeks. Thus, the potential to produce sulforaphane from the glucosinolate is gone away. Furthermore, the analysis reveals that no sulphoraphane compound is present either. It seems that the bacteria decomposed the glucosinolate into other components such as allyl cyanide and indole-3 carbitol. The latter might influence cancer incidence focus on its ability to alter estrogen metabolism and other cellular effects. Results showed dose-related decreases in tumor susceptibility due to Indole-3-carbinol (inferred by decreases in aflatoxin-DNA binding). So sauerkraut is not that bad. HOwever a closer examination reveal that broccoli sprouts (raw) will produce sulforaphane by mechanical breakdown (the chewing action) when glucosinolate is mixed with the enzyme myrosinase. But it will also produce indole-3 carbitol as a metabolite. So we have more for the buck with broccoli sprout than with sauerkraut. Why eat sauerkraut though is broccoli sprouts are better. Simply to trick ou system. Think of your strategy as sport training. When muscles are constrained to the same exercise, they get used to it and the athlete reach a plateau. The trick in sport training is to bring variation in the training to induce favorable changes. It's the same thing in the case of cancer cells. By adding variation, cancer cells get a hard time to adapt and the regimen is more effective. Conclusion:-------------Mix organic sauerkraut and raw broccoli sprouts in your diet. You'll get different concentration of different compound and like sprot training get more favorable changes. The one you try to achieve is cancer cell arrest.

My friend mum's has diebetic problems and it has come to my concern if she is able to eat sauerkrut. Thus I did some more research on the net. It seems that sulforaphane is an anti diabetic agent which is also present in sauerkrut. However it is present in a bigger amount in broccoli sprouts. Further intensify my knowledge about good eating habbits and diets is to have more variations to our food and what I read from above adstract is a good idea. Serving sauerkrut together with broccoli sprouts to get the win win best of both world situations. It is like body building. We do not just build on one part of muscles but we do all kinds of things to build up muscles in all areas.

Sauerkrut salad with almond nuts and rasins mixed


I think in order to encourage people to eat sauerkrut, I have to come out with healthy and tasty dishes. Eating sauerkrut by itself may not be so appealing as it only taste sour. It will be good if we can add sweetness and other taste to it. Rasins can add sweetness and almond a bit bitter. It makes a perfect snack and healthy and nutricient snack for after or before meals or when you are drinking. It helps to neutralise and blend the alcohol well into the body. When eating this snack, it reminds me of the lou hei dish that we eat during Chinese New Year.


I can eat a big bowl of it. It looks good and appealing in picture too. For vegetarian, it gives you good protein and energy and good taste tothe diet.


To be short, it kinds of add colour and joy to our life.

Packing Sauerkrut.


Ring Ring, I was very happy that Toon Huat called me. It must be about the plastic seal that I ordered. I was told it take 21 days and I am very sad about it. My sauerkrut will be ready today and I have to wait like 18 more days before I can pack them. I have buy 100 bottles but it will
not be good enough if it is not sealed. Luckily Toon Huat managed to order the plastic seals in time and they called me to go down to collect it. It is quite tricky here because I have to order a minimum of 3000 pieces of plastic seal. Or else they will not order it for me. I guess I will just have to go ahead with it.

It is so excited when I can start to pack the sauerkrut. However, very soon the excitement goes away as I start to feel tired. Packing the sauerkrut is tiring because you have to press and compress the vegetables so that they are air tight and the sauerkrut juice is enough to cover the vegetables. My forefinger got a bit blister after pressing the metal spoon for a long time. The container actually contains about 8 piece of big cabbage. I manage to pack 37 bottles of sauerkrut. The last 10 bottles are challenging as my fingers are already tired. It looks easy to pack but packing in big numbers are not easy.

The colour and taste is good. I receive very good feedback about it. But they just dun seem to understand that the sauerkrut juice left over are very nutricious an good benefits. I saw one that finish one bottle of sauerkrut in a day and carry the bottle to the sink. It pains my heart when she pour away the juice into the sink. Thus we have to educate people about drinking the sauerkrut juice. It is not just about the vegetables.

What is left after the 37 bottles are the juices left in the container. There is at least about 200ml of juice there and it is so tasty and good benefits. I am a bit stingy when I pack the sauerkrut. I always makes an effort that not too many juice cover the sauerkrut. I am just scare that the juice is not enough. The sauerkrut today smell very nice and taste very fresh. It is good sour and the vegetables are still crispy. I will prefer it to be soft and more sour but it is really depend on the individuals. I feel my stomach feeling very good after eating todays sauerkrut. It gives me a very good feeling and I am excited on my next container. I decided to use 1 purple cabbage to make the pink colour juice. It shoud be more appealing. I have to pack the next container quickly so that I can pour the remain juices over my new sauerkrut.

I believe that it wont be long that I have to buy more and more bottles. I wish my whole kitchen and all the cabinets are packed with this sauerkrut and I wish that every supermarket are packed with my sauerkrut and everybody starts eating this good and refreshing vegetable.

I allow myself to be induced with all the posible ways that I can develop my dream. When I walk pass NTUC supermarket. I see a vision. I see that I had a whole shelf dedicated to me just for putting sauerkrut. I have bottles of 200g, 500g, 1kg and the whole shelf is my sauerkrut. I walk pass the school, the canteen, the office, the void deck, esplanade, the casino and I see people eating sauerkrut. I see cartons and cartons of sauerkrut being packed into containers and exported. I see children, school children,teenagers, young adults, girls and boys, man and woman, grandmother and grandfather eating and enjoying benefits. I see people feeling happy and live longer.


This is when I decided to started POH LIN. It is after the name of my grandmother. Grandma is old and soon she will leave me. There is no way that I can repay her love for me or bring her back alive. But her name will live forever in my heart. She will continue to live in every bodies life. I hope that I am able to establish this empire and business and grandma can live to see my success. It is not going to be easy and there is a lot of work to be done.
